Simple to make, and absolutely delicious, it's easy to see how this combination of the classic cereal, greek yogurt and a bit of sweetness has won fans around the world.

Like overnight oats, overnight Weetabix is the perfect make ahead breakfast for busy mornings.

Ingredients and substitutions

This nutritious breakfast recipe is easy to make, requiring only a few common ingredients:

  • 2 blocks Weetabix: You can use any generic version of a Weetabix breakfast cereal (or Weet-Bix). Since Weetabix biscuits make up the base, however, it's not recommended to omit. You can also use gluten-free Weetabix for a gluten-free version.
  • Almond milk: we used unsweetened almond milk in this recipe, but any milk will work well. Oat milk is especially nice in this recipe, adding a lovely, creamy flavour.
  • Greek yogurt: A plain yogurt works well here since the jam lends some sweetness, but you can also use any flavour you prefer. If you want to keep this recipe diary free, opt instead for your favourite coconut yogurt.
  • Vanilla extract: Vanilla adds a splash of flavour, but is not integral to the recipe. You can also make this simpler by using a vanilla yogurt instead.
  • Raspberry jam: For a cheesecake-like flavour and a bit of sweetness, we topped these overnight Weetabix with raspberry jam. If you like the concept but don't want to use jam, you can use fresh berries and natural sweetener (honey, maple syrup) instead.

This recipe tastes a lot like cheesecake, thanks to the tangy, creamy yogurt combined with a sweet raspberry jam swirl.

Since Greek yogurt is the predominant ingredient in overnight Weetabix, the flavour is quite yoghurt-y. So choose a Greek yoghurt you like, since you’ll definitely taste it.

Weetabix vs. Weet-Bix

If you’re not from the UK or Australia, you might not be familiar with either Weetabix or Weet-Bix.

In short, they’re the same thing: a packed wheat cereal that comes in rectangular bricks.

Weetabix and Weet-Bix were invented by the same guyback in the 1930s. Weetabix is simply the British version of the cereal, whereas Weet-Bix is the original, Australian name.

Needless to say, both options work well in this recipe. Depending on where you live, just use whichever is easiest to get!

Does overnight Weetabix get soggy?

Yeah, they do. But that’s kind of the point. By mixing Weetabix and almond milk (or other milk), you create a soggy base layer that kind of acts as a crust for the yoghurt topping. Don’t worry though, it’s delicious.

How long should I put overnight Weetabix in the fridge?

To let everything soak and set, I recommend refrigerating overnight Weetabix for at least 4 hours.

How long does overnight Weetabix stay good?

While this recipe is best eaten the next day, they would still taste great after 2-3 days as well. The only issue is that the Weetabix might get too soggy, but if you don’t mind soggy Weetabix in the first place — go for it. Just make sure you cover your bowl with plastic wrap or foil to ensure freshness.

Description

Overnight Weetabixare insanely good. Slightly sweet, with a Weetabix base and raspberry jam swirl topping, this breakfast tastes like eating cheesecake for breakfast.

Ingredients

  • 2 blocks Weetabix (crushed)
  • ½ cup almond milk (or milk of choice)
  • 170 grams Greek yoghurt (plain or vanilla flavour)
  • 1 teaspoon vanilla extract (optional*)
  • 1 Tablespoon raspberry jam (or other favourite flavour)

Instructions

  1. Crush Weetabix and place in the medium sized bowl.
  2. Add almond milk over Weetabix and let set for a few minutes.
  3. Once the Weetabix have soaked up some of the almond milk (2-3 minutes), use the back of a spoon to spread and smooth the mixture into an even layer.
  4. Meanwhile, combine the Greek yoghurt and vanilla extract if using.
  5. Pour the Greek yoghurt mixture over the Weetabix base. Use a spoon to gently spred the yoghurt into an even layer.
  6. Dollop the jam in a few places on top of the yoghurt. Using a toothpick, knife, or chopstick, swirl the jam through the surface of the yoghurt to create a marbled look. This step is completely optional, but it makes the final product more aesthetically pleasing.
  7. Cover the bowl of overnight Weetabix with foil or plastic wrap and place in the fridge.
  8. Refrigerate for at least 4 hours to allow everything to chill and set.
  9. When ready to eat, remove from fridge and dig in! These overnight Weetabix will keep covered in the fridge for up to three days.
