Why use tofu for vegan yogurt

When it comes to making dairy-free yogurt, tofu is a top choice for many reasons:

  • When blended, tofu has asmooth and creamy texturethat’s impressively similar to traditional yogurt’s consistency.
  • It’s agreat plant-based protein source. Protein helps to slow digestion, keeping you feeling satisfied for longer. Having tofu yogurt in the morning is a great way to add plant-based protein to your breakfast.
  • It’s alsorich in nutrientssuch as calcium, iron, and vitamins, which can promote many health benefits and help support overall health.
  • It has a relativelyneutral taste, which means it can be combined with a variety of other ingredients without overpowering their flavors.
  • It’s a prettyaffordableprotein option with a long shelf life if kept unopened in the refrigerator.

This recipe is much simpler and perfect for everyday use. You can make it without having to worry about sterilizing equipment, achieving ideal temperatures, or other similar concerns.

Ingredients you’ll need

Tofu

Let’s start with the main ingredient of the recipe. To make tofu yogurt, you can use silken, soft, or medium-firm tofu, depending on the desired consistency of your vegan yogurt. The denser the tofu, the thicker the yogurt will be.

  • For a thickGreek-style yogurtconsistency, use medium-firm tofu. It’s my go-to choice for this recipe. It always yields a smooth and creamy texture, as you can see in the photos, making the perfect high protein alternative to Greek yogurt. Depending on the brand, firm tofu may also work.
  • For a thinnerregular yogurtconsistency, use silken or soft tofu, as their water content is higher.

Note: There are many types of tofu available, and the taste can vary depending on the brand. My top tip is to select a tofu brand that you personally enjoy the taste of. Also, fresh tofu is best here as it doesn’t leave a strong tofu-soy flavor. I always go for the Sunrise brand.

Other ingredients

The other 4 ingredients used in this recipe are:

  • Cashew Butter: Natural cashew butter provides a rich and creamy texture to the yogurt and adds healthy fats. Its also helps masking the mild flavor of tofu without being overpowering.
  • Lemon Juice: Fresh lemon juice adds a tangy flavor and slightly sour taste, similar to traditional yogurt that is made by fermentation. Don’t skip it!
  • Maple Syrup: Maple syrup is my preferred sweetener for this recipe because it’s a liquid sweetener that blends well with the mixture, and it only requires a small amount to add the desired sweetness. Feel free to use another type of sugar if desired.
  • Vanilla Extract: It’s an essential flavor booster in this recipe. Please, don’t skip. It makes a lot of difference in my opinion.

There you have it, a simple recipe for creamy tofu yogurt that’s both delicious and nutritious!

Equipment note

I usually use my food processor to make this recipe as it’s convenient and helps achieve a smooth consistency effortlessly.

However, a blender works just as well. I have successfully made this yogurt in my Vitamix and Nutribullet many times. If you don’t have a high-speed blender, a regular blender should work fine. Just make sure to blend thoroughly until the mixture is completely smooth.

Note: In the recipe video, I blended the tofu first and then added the other ingredients, but this was just to demonstrate that tofu can become very creamy without additional ingredients. When making your yogurt, you can add all the ingredients at once.

Tips & recipe notes

  • Choose the right tofu! As mentioned earlier, the type of tofu you use will affect the consistency and taste of your yogurt.
  • To achieve a smooth and creamy consistency, be sure to blend the ingredients thoroughly. Depending on the type of blender or food processor you use, you may need to stop and scrape down the sides a few times.
  • The consistency of tofu yogurt tends to become firmer as it sits in the refrigerator. If it becomes too thick for your liking, you can always add a liquid such as soy milk or water to adjust its consistency.

Variations, additions & swaps

While this recipe is delicious in its simplicity, it also lends itself well to a variety of add-ins and customizations. Get creative and experiment with different combinations to find the perfect flavor for you.

  • Easily change the consistency of the yogurt by changing the type of tofu used in the recipe.
  • Enhance the taste of your tofu yogurt byincorporating fresh or frozen fruitsof your choice! Blueberries and peaches are my favorites, but feel free to experiment with any fruit you like. You can also mix and match different fruits for a unique flavor combination. I recommend using a 1/2 cup of fruit per cup of tofu yogurt.
  • In case you don’t have cashew butter, you cansubstitute it with other nut or seed butterslike almond butter, peanut butter, or sunflower seed butter, to achieve a similar texture in the yogurt. However, it’s important to note that using a different nut or seed butter will change the flavor profile, as each type of butter has a distinct taste.
  • You can also substituteraw soaked cashews instead of cashew butterin this recipe. For this, you can use about 1/3 cup of cashews.
  • Toadd probioticsto your tofu yogurt, you can mix in some probiotic powder or capsules. Simply empty the capsule into your blender or food processor, making sure to discard the outer shell. Look for a high-quality probiotic supplement with a variety of strains and follow the recommended dosage.

Please note that adding ingredients like fruits can reduce the shelf life of the tofu yogurt.

Storage tips

To ensure freshness, store your tofu yogurt in an airtight container in the refrigeratorup to 5 days. Avoid freezing it, as this can significantly alter its texture.

Similar to other types of yogurt, a small amount of separation may occur during storage, resulting in a slight separation of water. All you have to do isgive it a quick stir before serving.
